Vaulted chocolate has been stored for years in our vault: a climated controlled special area of the Solkiki storerooms.
 
The texture confirms the aged nature of any Vaulted Solkiki bar, as do the myriad notes in the softened profile.  
 
Tireo -  an experimental lot from a traceable area of the Dominican Republic - shows real promise as a Vaulted option, where the profile remarkably improves with age.   
 
A longer roast delivers a different profile indeed!   Fuller-bodied than Tireo, Long Tireo brings a more chocolatey profile.  Notes of vanilla and lemon n lime persist in both profiles, but Long Tireo offers a pleasing light bitterness and a red wine character that can occur in the presence of red berry notes and tannins.  Light nuttyness and brown sugar round out a beautifully aged chocolate.
 
Really, remarkable.  Such a journey from our first tastings some years ago.  Only a few bars are offered, we are working on obtaining more.  Be decisive or regretful, your call!
